What should everyone be eating?

I just found this thread, and I have decided to share four recipes. I hope some of you will make these dishes, and eat them, and enjoy them. :)

Broccoli Soufflé

(Okay, I know it sounds disgusting -- BROCCOLI? Are you kidding me? -- but I'm serious! It's delicious! Hot or cold!
My mother found this recipe as a way to get her young kids to eat broccoli, and it WORKED, because there's a LOT of dairy products in the recipe as well!)

Ingredients:

2 packages frozen chopped broccoli
0.75 cup mayonnaise
0.5 cup Coffee Rich (or milk, cream, or half-and-half)
1 onion, chopped
1.5 tablespoons flour
3 tablespoons butter
3 eggs, beaten
dill to taste
salt and pepper to taste

Directions:

Cook frozen broccoli according to instructions.
Drain with a mesh strainer (or a colander) into a bowl.
Add Coffee Rich and mayonnaise to bowl, and put bowl into refrigerator.
In a skillet, sauté onions in butter, then remove from heat and add flour.
Remove bowl from refrigerator; be sure the broccoli mixture has cooled down.
Mix all ingredients together.
Pour into a greased 9" x 9" casserole.
Bake for 40 minutes at 350°.
Cut into squares.

May be served hot or cold, as a side dish or an appetizer.
 
Greek-Style Pork

Ingredients:

1 pound boneless pork sirloin
1 tablespoon cooking oil (canola oil works best)
1/2 of a medium onion, cut into wedges
one 14.5 oz can diced tomatoes
1/2 cup raisins
1/2 tsp dried oregano, crushed
1/2 tsp cinnamon
hot cooked rice (optional)

Directions:

Step 1 - Trim fat from meat, and cut into 1/2-inch cubes.
Step 2 - In a large skillet or wok, saute the onions.
Step 3 - Add the pork to the onions. Drain off fat. Return all pork and onions to skillet or wok.
Step 4 - Stir in the undrained tomatoes, raisins, oregano, and cinnamon. Bring to a boil, then reduce heat.
Step 5 - Simmer, covered, for 20 to 25 minutes or until meat is tender. Serves 4. Yummy.
Step 6 - (preferred) Serve over hot cooked rice. Also yummy.
Step 7 - (optional) Serve with grated cheese. Also also yummy.
 
Hello Dolly Bars (a.k.a. Seven Layer Bars)

Ingredients:

1/2 cup unsalted butter
1 cup graham cracker crumbs
1 cup semisweet chocolate chips
1 cup butterscotch chips
1 cup coconut
1 cup chopped walnuts
1 can (15 ounces) sweetened condensed milk

Directions:

Heat the oven to 350°. (The remaining directions will take just enough time for the oven to heat to that temperature.)
Melt the butter -- either on the stove or in a microwave.
Mix the graham cracker crumbs in with the melted butter.
Pat the butter/crumb mixture into a 9-x13-inch baking pan.
Sprinkle the remaining ingredients over the crumbs in the order given, in layers.
Drizzle the sweetened condensed milk over all. Do NOT stir.
Bake at 350° for about 25 minutes. Cool and cut into bars. Yummy.

Notes:

Instead of butterscotch chips, you may use peanut butter chips, or any other flavor you like.
Instead of walnuts, you may use (sliced) almonds, or (crushed) peanuts, or any other nut you like.
 
Tomato Corn Soup

Ingredients:

1 onion, chopped
2 stalks of celery, chopped
2 cloves of garlic, crushed (or 2 teaspoons of crushed garlic)
2 tablespoons of oil
4 cups of corn
8 big tomatoes (or 2 cans of crushed tomatoes) (see Note No. 1 below)
2 cups of water
1 teaspoon of salt
1-4 dashes of cayenne pepper (optional) (see Note No. 2 below)

Directions:

Step 1: Sautee vegetables, garlic and cayenne pepper in large pot.
Step 2: Add tomatoes and water.
Step 3: Bring to a boil.
Step 4: Cover and simmer for 30 minutes.
Step 5: Serve and eat. Yummy.


Variation: Puree the whole thing afterwards for a "prettier" soup.


Another Variation (which I do almost all the time): Brown one pound of stew beef before sauteeing the vegetables.
(The result is not Tomato Corn Soup, but Tomato Corn Beef Stew.)


Note No. 1: If fresh tomatoes are used, a can of tomato paste or canned tomato sauce is suggested to thicken the soup.

Note No. 2: You can add up to four dashes of cayenne pepper without making it spicy. (I'm a wimp, and I make it with three or four dashes.)
