Food allergies and recipes

I've just been diagnosed with a ton of food allergies, and I'm struggling to find recipes to work with. The Celiac groups have been of no help, as their recipes call for gum as a binder in any baked goods.

The TMF community is diverse, and I was hoping there might be someone here with ideas. For that matter, perhaps one of you is a chef!

Any feedback would be appreicated.
 
Can you be a little more specific? I know of a couple of sources. But, where to direct you would depend on what you need to avoid. If you don't want to be specific here, feel free to PM me.

I'll try to supply the information you seek.

I'm gluten sensitive, and also allergic to all forms of gum, potato, soy, cow's milk/dairy, yeast, chicken, and turkey.

The recipes I foudn through celiac groups ALL call for the use of gum (in some form) as a filler. At the moment, I have no cereal, breads, or anything resembling snack foods. It's clear I'll have to make my own, but I've got no recipes.

Any thoughts you have would be appreciated... and if you require more info, I'll provide it.
