where you quote multiple posts in a reply? I press the quote button on one post I want to reply to, but that's it. Yet I see some posts that have blocks of text quoted from like, 3 or 4 different posts.

Look in each post you want to quote for the following button:

Click it once to quote that post. When clicked it will turn orange and look like this:

When you then hit "Reply" every post you've selected, even if you selected posts on different pages in that thread, will appear quoted for you.
