To answer the original question, my fave quick eats are pizza (homemade of course, on whatever carbohydrate substrate will serve as a crust) or pasta with veggies.

I have recently tried making primitive "pizza" by putting tomato sauce and pizza spices on whole-grain bread and heating it in the oven until warm. It's quick and serviceable but rather mushy compared to real pizza.
