Zefram Cochrane will fly his one man ship "The Phoenix" (a converted missile) getting the attention of a Vulcan ship that is traveling thew that area of space, thus bringing about First Contact with alien life on earth.
In 2151
Jonathan Archer will captain the Enterprise NX-01 (until 2161), and his actions as Captian of that ship will cause the creation of the United Federation of Planets and later become president of it (2184-2192).
The 23rd Century
Captain Christopher Pike will Captain the NCC-1701 for just over 11 years, he will then be succeeded by Captain James T. Kirk when he accepts a promotion to Fleet Captain. Kirk will go on to become one of the most famous Captains in Star Fleet.
Sometime later
While attending a ceremony for the Enterprise B, Captain James Kirk is believed killed while helping Captain John Harriman save refuges from El-Auria (including Guinan).
In 2344
Captain Rachel Garrett will command the Enterprise C, she and her crew will die while trying to aid the Klingon outpost of Nerranda III while under attack from Romulan forces. This act would lead to a truce between the Federation and the Klingon Empire.
By around 2363
Captain Jean-Luc Picard and becomes Captain of the USS Enterprise D (and later E). His crew would travel back in time to save earth from the Cyber/Organic species known as the borg. They would find and assist Zefram Cochrane and aid him in making his flight where he will gain the attentions of a Vulcan space craft traveling through that area of space. While aiding Professor Cochrane, Enterprise E engineer, Geordi La Forge will discover flaws in the ship and correct them.
However all of this is F.U.B.A.R. now, because (if the Enterprise still meets up with the Bontany Bay) Spock will dies, and there will be no way to bring him back. Thus he will note be able to travel back in time to advice his younger self. With out Vulcan around who knows what implications (if any) that could have on the crew of the TNG Enterprise. Will they still meet The Borg, and if not why would they travel in time. If they don't go back will Cochrane's ship make it, or will it simply blow up, and thus the Vulcan's will not see him, there is no "First Contact" and there for the Star Trek Universe just imploded. Excuse me while I wipe the blood that is running from my nose.
