Doctor McCoy will still have XENOPOLYCYTHEMIA.
An Astoroid will still be heading towards the planet Kirk met Miromanie.
Ceti Alpha VI will explode (Khan might not be on it, but it's destined to happen)
Voyager VI will return to launch point (It's an unavoidable truth like it or not)
The probe in Star Trek IV will eventually come to Earth (aagain an unavoidable fate)
There are probably other things but I can't think of them at the moment. Simply put, anything that the death of George Kirk wouldn't have effected should still happen. Like Khan being a Siek or Sulu being Japanese... oh wait.
