It's just my opinion, but it's not about the safeword. If anything, most people will use it well before being broken. I guess the easiest way to tell is when their laughter changes. They might still laugh but it's not a fun laugh, and they usually are begging and probably crying, and don't appear to be having fun at all... Some of it is mental, and some physical. Some might not be able to bare tickling at all and will break very quickly, others are broken when their body is completely run out of energy. You won't see people broken very often in video's.
