To make the background on this short, I'm considering doing a double minor in addition to my major in Poli-Sci, and was curious if anyone who's followed a similar track(the subject doesn't matter)has some advice on whether or not this is a decent idea or whether I'm just setting myself up to be needlessly pulverized for the next 2 years (keep in mind, after that I intend to either get my MA or go to law school).

if you have the time and money, learning something else (be it related to what you are doing now or something completely different) simply cannot hurt. depending on the kind of law you plan on studying, perhaps something somewhat related could help?
I almost minored in history, but passed because I figured it'd take me another year to get the degree and I really wanted the hell out of college. No regrets, and not enough love to put in the time, but that's just me. If you're passionately interested in both subjects, I say go for it.
Well, dude, since you asked, I think it kind of depends on what you want to do with all that education when you're done. When I hire people (They have at least an undergrad degree and often an MBA) I don't care about minors. I think (and I could be wrong) that minors were important if you were looking for a career in academia.
So, if the double minor (and frankly I don't know what the difference is between that and a single minor) causes you to have to take more classes/credits than you would otherwise, I would say screw it, just get the BA, MA or law degree. Minors are, well, a minor consideration to a hiring manager.
If I had it to do over again, I would've definitely gone to law school instead of grad school. "Do not pass go!! Do not collect two hundred dollars!!" Go straight to law school! After everything I've done since 2004, I still may end up in law school-the very thing I was trying to avoid! With me, there's this thing ticking inside of me saying "you're not done yet!!" Life has a way of driving you full circle whether you wanted to or not!
My daughter has a major in sports management, and is double minoring for business and pre-law coursework. She wants to be a sports agent, but wants to be able to feed herself while she builds clientele.
Whatever your decision is, I wish you the best and know you will do what makes you happy.

I got my first degree in agricultural engineering, after,my MSc, then a PhD and now I doing my MBA. All in different countries.
Never regret it, but I did one at a time.
One enemy at a time is best, if you overextend, then you can lost grip.
Since I am not fron the USA, I do not know if a minor would be of any use or just for academic fun and pleasure, in any case take into account how it could affect your grades, to avoid damaging them.

I'll second that. Minors aren't really relevant. If you like a subject enough, major in it; if not, and you want to take it because you're interested, go for it. But don't assume a minor helps in any way, because it really doesn't.
