Tomorrow, for dinner, I'm gonna make my fish and chips. I make a Guinness beer batter, which makes the fish (whiting) cook a wonderful shade of brown. I also ridge cut the potatoes, and fry them, with flavorful seasonings. To dip, I use this nice red wine vinegar that was given to us by friends.

On Sunday, I'm gonna make beer brats. I'm gonna marinate the bratwurst in lager with the onions and peppers, and let it sit on the stove top for a bit, and then they go on the grill. Mrs Knox is going to make mesquite chicken. We're sending our guests away with very happy, full stomachs.

As an appetizer, I'm making this thing...it's a dip. A brick of cheddar, melted in a saucepan. Add salsa, onions, red and green peppers, and chopped Italian sausage, first browned in a skillet. It's fantastic, you dip bread (a la fondue), or whatever you like. It's been called "Ugly Dip". What it is, is a blue collar, Jersey Shore thing.

I'm wildly stressed, though. My family's right in the firing line down in Florida, and they're hunkering down rather than running. That's what us Knoxes are all about. We're a stubborn lot...

Just bought a lot of salad stuff today. I'm embarrassed about the amount of money I've spent! Maybe I'll get some feta cheese and go at it Greek style!😀

TTD ,Shy girl and to all on TMF I wholeheartedly agree with that advice .I wouldn;t want to hear about any of the wonderful members here on TMF being hurt,
end up having a miserable weekend than
a awesome fun happy holiday as it should be!.
Oh and TTD,another favorite of my hubby's when he bbq's is to put Corn on the Cob still has the husk on it on low heat ,turn it every now and then and sprinkle water from a spray bottle on the corn just to keep it moist..When it;s done,the husk hair will come off really easy and the corn is DElicious!!MMM MMMM good!.
