The xbox and ps3 have near identical graphical capabilities (xbox has a more powerful graphics card, but ps3 has a more powerful computer). That said, it's entirely a matter of preference, and the xbox 360 online experience is vastly superior (and I say this as a ps3 owner, so don't go ranting at me, it's a fact).
If he was into KOTOR, might I suggest
Mass Effect? It's made by the same studio, and it has the same kind of action RPG feel to it. Another big one that just came out is Fallout 3, which is a neat futuristic RPG-shooter game.
Beyond that, Gears of War is pretty amazing. If you want realistic shooters, Call of Duty 4: Modern Warfare is the best around, and there's always Halo 3 (kind of the flagship title for the system).
If you guys are into horror movies, Dead Space is really good. It's a sci fi horror game where you play an engineer sent to fix a space station, only to find everyone's dead and there are alien things sneaking around.
And finally, Left 4 Dead just came out. It's a zombie game, where you play as a team of people trying to get across an area to a helipad or whatever to escape, but there's zombies in the way
😛. It's really fun, as the game dynamically changes where zombies spawn based upon how well you're doing, how much ammo you have, etc, so it's never the same. Plus, you can play as zombies in other people's games

I subscribed to this when I picked up my PS3, and it's been great. It's basically netflix for video games; you pay $20/month for two games out at a time, and when you send one back they ship the next game in your queue. There's tons of games out there which are awesome to play through once, but there's really no reason to go through again. Also, if you really like the game you can buy it for a used game price, and they'll ship you the box and manual along with the next game on your list. It works well for me: I've played through something like 8 games in the past two months, and paying $40 is a lot easier on my budget than $480
