Well, concerning the stop of most renfaire tickling projects (Canelli, Casei Medievale, etc), the primary cause might be simply concerned with the pandemic.
While, with regard to the project of Stimulating Feet (Reflexology Researching), I personally think that its condition may be more complex.
For I've perceived the potential shift of its projectors' intention throughout years.
Specifically, the SF projectors might primarily intended to show the research-aimed productions of tickling their participants (when they just began launching the renfaire project & prior to that).
In the early time of their launch of the renfaire project, they'd made some adjustments about their tickling ways & tools on different participants, which showed some variety of their tickling ways & tools and of different participants reactions.
Such adjustments seemed to peak in 2024 when the name of their channel changed from 'Stimulating Feet' to 'Reflexology Researching'.
In the earliest footages of the current channel 'Reflexology Researching', the participants of the renfaire project tended to show some obvious ticklish reactions.
Even in one early footage, the RR ler tried to tickle a participant with her fingernails (and this participant only had obvious ticklish reaction when she's tickled by fingernails but not by the other tools):

However, since 2025, the newly shown footages have been presented consistently similar tickling ways with virtually the same tools.
Accordingly, the new participants have shown generally & significantly less ticklish reactions (especially in the footages that're published in the very late 2025 & 2026).
For me, such a significant shift of presenting scenes indicates a potential shift of the intention of the SF/RR projectors.
That is, those projectors have seemed to have their increasing intention of presenting the seeming non-ticklishness of the female participants.
On the other hand, they can still sell much money with such videos, because many men still enjoy just watching the females lees being tickled with no obvious ticklish reactions.
In a word, from 'Stimulating Feet' to 'Reflexology Researching', the projectors (of the renfaire project at least) have been likely to make their productions with an increasing intention of showing the fetish-related theme & the female participants' (seeming) toughness of resisting being tickled.
It's accordingly led to the SF/RR lers' increasing holding back or their tickling effect in the renfaire profect.
Anyway, these above are based on my personal speculation. I (and probably nobody) can offer any solid evidence for them.
So, I open to receive the disagreement on my speculation.
I'm sorry but I'm afraid I have to disagree with you and I simply think you have come to the wrong conclusion. Let me explain.
First of all, they made all their renfaire footage in 2022, and they haven't shown anything filmed after that year. So I don't think you can really talk about any shifts or adjustments in recent years, since all the footage was made during one year period. Of course, they made some modifications between those festivals in 2022, but when they started releasing their footage to the public in early 2023, they have already finished filming it.
As for them changing the name, I don't think it was done to reflect their change in attitude, but simply due to the fact that their channel and social media accounts are quite often banned and deleted. That's why at the moment their YouTube channel is called Reflexology Researching, but their X account, that haven't been banned and still has more of their recent previews, is still called Stimulating Tickling Feet. And their Instagram reappeared few times under different names. Also I suspect that they try to disguise their fetish content as some kind of research project, to avoid being flagged as porn videos, thus the words "reflexology" or "research" in their names.
So I would say they probably haven't quite thought it through and they haven't tested or learnt how to properly tickle someone to make them laugh. It is also highly likely, as some had suggested, that in reality very few people who are ticklish would volunteer to do it.
